A few substitutions in cooking

Check out the following list of substitutions and you'll probably find a few handy ones.

*Buttermilk=
1C milk
1T white vinegar or lemon juice
put vinegar in a liquid measuring cup
add milk to 1C line
let sit for 5 minutes and then use as the recipe calls for buttermilk! Or use 1 cup plain yogurt.

*corn syrup
light- 1 cup sugar plus 1/4 cup water.
dark- 3/4 cup light corn syrup plus 1/4 cup molasses; or 1 cup maple-flavored syrup.

*Herbes de Provence- 4 parts thyme, 4 parts savory, 2 parts lavender & 1 part rosemary.

*Ketchup- 1 cup of tomato sauce, 1 1/4 cups brown sugar, 2 tbs. vinegar, 1/4 tsp. cinnamon, pinch of ground cloves and allspice.

*Poultry Seasoning- Equal parts sage, thyme, oregano and marjoram

*Bread crumbs
toast a slice of your favourite GF bread and send it thru the blender until it is in crumbs or your favourite crackers should work too.

*1 tsp Allspice = 1tsp cinnamon & 1/8tsp ground cloves

*Baking powder- 1tsp baking soda plus 1/2 tsp cream of tartar

*Pumpkin pie spice- 4 parts cinnamon, 2 parts ginger, 1 part nutmeg, 1 part allspice and dash of cloves

*Replace OIL in baking by using the equal measure of applesauce!

*EGG there are many ways to substitute eggs in baking the easiest is ener-g egg replacer
Other alternatives:
-1/2 of a mashed ripe banana plus 1/4 teaspoon baking powder for each egg
-1 tablespoon cornstarch plus 3 tablespoons water for each egg called for in recipe
-Dissolve 1 tablespoon unflavored gelatin in 1 tablespoon cold water, then add 2 tablespoons boiling water. Beat vigorously until frothy- replaces 1 egg
- Grind 3 teaspoons flax seeds in a coffee grinder and whisk into boiling water. Leave it to stand for 5 minutes before adding to your cake mixture
-2-3Tablespoons unsweetened applesauce works well in baking also

*Sour cream- plain yogurt --- can be used both ways! ALSO can use Tofutti's Sour Supreme in place of either.

*Brown sugar- 1 cup granulated sugar plus 2 Tbsp molasses or dark corn syrup
