Please pass the dinner rolls.....yes, dinner rolls!

For years, the tradition in our house was to have bread of some kind with most of our evening meals. Not every evening, but more often than not. It's one of those meal items that I really missed for a long time, my whole family did! When I happened upon the roll recipe that we now use most often, I was skeptical at best. It just seemed very unlikely that I'd actually found something that would fit the bill. Silly me!

Last year, when I was planning what I would bring for Thanksgiving with my husband's family, I found the best recipe for dinner rolls. As I said before, I was not expecting this to be "the one" but was thankfully very pleased with the end result! The best part was, so was everyone else, major bonus and something I was very thankful for. Totally fitting with the season, I thought.

This recipe was not only quick and easy, but made enough when doubled for everyone to have one at the family dinner. It doubled easily and made over 30 dinner rolls. Gluten-free eaters and gluten eaters alike were able to enjoy these rolls. To me, they remind me of the "brown and serve" rolls I remembered from when I was little. Not a bad flavor and totally tasted like wheat!

The main flour in this roll recipe is one of my favorite flours to use in baking, garbanzo-fava bean flour, also called garfava flour. When you are mixing breads and baked goods that have this flour as the main ingredient, there is often a bean flour smell, but in this recipe it does not come through in the finished product. All you get is the wonderful flavor of a fine dinner roll!

For some reason, as these rolls cool after baking, they tend to kind of cave in around the bottom of the roll. This is something that I've tried to change, but have yet to find a way. I've tried not removing them from the muffin pans until they are totally cooled, that produced a soggy bottom to the roll. Another idea I tried was to let them cool partially and then remove them, they still caved in. The rolls taste wonderful, but look a bit funny after they cool. If anyone has an idea to avoid this, let me know.

All in all, these rolls are wonderful, even if a bit silly looking. They make wonderful sandwiches the day after the big holiday dinner. Also makes a great substitution to the bread that is offered at many holiday dinners for dipping in spinach dip (make sure it's not served in a gluten bread bowl) or hummus. Fondue would be a great option too, as long as it doesn't contain gluten, of course.

Another bonus with this roll recipe is that it is easy enough to make before any evening meal. Pop these in the oven as you put the finishing touches on your pot of beef stew, chicken soup or chili. It complements any dish. Brush the tops with some melted garlic butter to serve along with your favorite gluten-free pasta meal. Make a large batch of them early in the week and store them in a zipper bag for serving along with any meal during the rest of the week. Just simply heat them like you would any other dinner roll and serve. As you can see, this roll recipe is great for most any occasion, but is simple enough for the ever day dinner at home.

Family gatherings are always a challenge when it comes to avoiding gluten. I've tried to find options that I can bring for my family to enjoy that will also be enjoyed by everyone else as well. This roll was a perfect fit and everyone seemed to enjoy it. With the holidays soon to be upon us, you'll have to test this out on your own family. It's one that is quick and easy enough to make for any family dinner, not just a holiday. Give them a try, you might just find that this recipe also solves one holiday dilemma for you this year!
