An all around good sandwich bread!

It's been a while since I wrote a blog about just one food or recipe. Today, I felt that it needed to be written. Yesterday, I experimented with an idea and came up with a winning bread recipe for my family. I adapted a recipe I found in a cook book to fit ingredients I had in my pantry and my family's taste preference.

How many times do you make a loaf of bread either in your oven or in your bread machine that stays moist even after slicing? Quite often, with gluten-free bread, it tends to dry out as it sits. Thankfully this bread, even though it was sliced yesterday, was still just as moist as it was from the first slice. No toasting is necessary, but it does make amazingly tasty toast.

The flavor and texture of this bread remind me a lot of soft wheat bread. Such a welcomed change from the ordinary gluten-free bread I have been able to make. This recipe, by far is the best for sandwiches and just eating. I have tried it yet, but I'd venture a guess that the dough would make amazingly tasty hamburger or hot dog buns as well. That will be my next experiment!
