A Hint of Orange Cupcakes safe

These are tiny and delicious

This is something that you could make in a hurry and still have it be homemade. You could also add more orange rind for more flavor.

Prep time 10 minutes
Cooking time 8 to 10 minutes
Servings

Ingredients

2 cups white rice flour
1/2 cups sweet rice flour
2 tsp baking soda
1 cup of water
1 tsp vanilla
2/3 cup orange juice
1 cup sugar
1/3 oil
2 eggs
Frosting (I used Betty Crocker frosting and added orange zest.)

Instructions

Preheat oven to 350 degrees

In a medium bowl add all dry ingredients.

In a large bowl mix all the wet ingredients.

Blend together just until blended.

Add wet ingredients to dry.

Poor into a sprayed mini muffin pan.

Bake for about 8 to 10 minutes. Keep checking because ovens vary.

Cool on a rack. Frost with your favorite frosting. I added some fresh orange juice from half an orange to make the frosting more like a glaze. Then I topped it with orange zest.

    Yummy...these look amazing. I may try to make these and freeze them before frosting. A quick and easy treat to pull out when we get unexpected guests during the holiday season! :-)
