Apple Sauce Breakfast Focaccia safe

A tasty way to start a chilly fall morning!

A favorite at my house. Quick and easy to mix up and have baking while you are getting ready to start your day, or bake it the night before and simply reheat for a quick breakfast treat!

Ingredients

Focaccia:
1 1/2 cup gluten free flour blend
1 teaspoon xanthan gum
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoon egg replacer
4 Tablespoons sugar (divided)
1 egg
1/2 teaspoon vinegar
5 Tablespoons butter or margarine, melted (divided)
1 cup lukewarm water
2 1/2 teaspoons dry yeast

Topping:
1 cup applesauce
1 Granny Smith apple, peeled, cored and diced
1/4 cup sugar
1 teaspoon apple pie spice

Instructions

Spray a 9×13 baking pan with cooking spray.

In a small bowl, whisk together the flour, xanthan gum, baking powder, salt, and egg replacer. Set aside.

In a mixing bowl, place 3 tablespoons of sugar, the egg, vinegar and 3 tablespoons of the margarine. Place the rest of the sugar in a measuring cup with water and yeast.

With a hand held mixer on low speed, beat the egg mixture. Add the yeast water and beat in half of the flour mixture. With a spoon, stir in the remaining flour mixture and beat until smooth. Pour the batter into the prepared baking dish and spread to cover the bottom of the pan. Brush the top of the dough with the remaining melted butter or margarine.

In a microwave safe bowl, place the ingredients for the topping and stir to combine. Microwave on high for 1-2 minutes, stirring every minute to check to see if apples are getting soft. They should be soft, but not mushy.

Place apple topping over the batter in the baking dish. Sprinkle with a mixture of cinnamon and sugar if desired. Cover and let rise until double, about 20 minutes. Bake uncovered at 375 degrees for 20-25 minutes or until the top is slightly browned. Cut into 3” squares and serve warm, or reheat in the microwave.
