BBQ Meat Loaf
A fun change from the ordinary meat loaf...and quite tasty too!

My family LOVES meat loaf, but sometimes I like to add a different twist to it. This time I decided to use BBQ sauce in the meat and on the meat to finish it off. It was a meat loaf full of BBQ flavor, so tasty!

Ingredients
2 pounds ground beef
2 eggs
1 cup gluten-free oatmeal
1/2 1 cup BBQ sauce, enough to make your meat mixture plenty moist but not runny
1 teaspoon onion powder
1 teaspoon garlic powder
Fresh ground pepper, to taste
BBQ sauce for topping the meat loaf
Instructions
Combine all ingredients and shape into a loaf just as you would for any other meat loaf. Bake at 375 degrees until cooked to desired internal temperature. When it’s almost completely finished cooking, spread BBQ sauce over the top and return it to the oven to finish cooking.

Made this tonight! Used flax seeds and water instead of eggs and mixed in some fried onions and kale--it was delicious!
