Blueberry Banana Coconut Bread

This recipe was adapted from TanyaG's amazing banana bread recipe, and is a fun twist on banana bread. Full of flavor and very moist, a hint of the tropics with the addition of coconut. Super tasty!

Ingredients
1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
2 eggs
3 large bananas
1 teaspoon vanilla
2 cups rice flour
1 cup coconut
2 teaspoons baking powder
1 teaspoon xanthan gum
1 cup blueberries, fresh or frozen (thaw if frozen)
Topping
1/4 cup brown sugar
1/4 cup coconut
2 Tablespoons soft butter
Instructions
In a large bowl, cream the butter with the sugars. Beat in eggs, vanilla and bananas. In another bowl combine flour, coconut, baking powder, and xanthan gum. Add dry ingredients to the wet ingredients. Once combined, fold in blueberries. Pour into a greased 5×9 inch loaf pan. Combine topping ingredients as you would for any crumble and sprinkle on top of the batter. Bake in a 325 degree oven for about 70 minutes or until a toothpick inserted in the center comes out clean. Cool completely before slicing.
