Candee Family's Quinoa Salad
Easy to make, can do many combinations to work for YOUR family.

I use Quinoa as a base for many salads and meals, Almost anything you can do with rice and pasta you can use this whole grain.

Ingredients
Basic recipe:
1C Quinoa
2C water
pinch of salt
2 Stalks Celery
1 Carrot
3 green onions/scallions
1/2 Cucumber
1 can EACH kidney beans, Black beans, Garbanzo beans (or substitute 3 cans of your favourite beans!)
3/4 bottle Italian type dressing- or to taste.
Instructions
Cook Quinoa as instructed on the package (generally 2C water to 1C Quinoa with a pinch of salt) bring to a boil for 3 mins then put a lid on it and walk away!) it is best to cool the quinoa before adding other ingredients but can be a warm salad as well.
cut vegetables to small bite size pieces add the beans and mix in the cooked Quinoa. Add your favourite Italian dressing and you are done!
**This recipe can be made to fit your family’s taste by changing some of the ingredients or adding more to it. If you have a larger gathering make more Quinoa and add some more of the vegetables. Transports easily and you do not need to worry about the dressing going bad on the way to your gathering.
