Caramel Apple Bars
Ooey Gooey Caramel Apple Goodness!

This is a new version of an apple streusel bar that my family loved before going gluten-free. The original recipe called for raspberry jam, not caramel, but I was in a fall kind of mood today and decided to use caramel instead. So yummy! Perfect for any "fall" type gathering, or just for a yummy treat to have with your cup of coffee or tea.

Ingredients
2 1/2 cups gluten free flour blend (I used TanyaG’s recipe that is here on Gling)
2 cups gluten-free oatmeal
1 1/4 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1 cup butter, melted
3 cups thinly sliced, peeled, tart apples (about 3 medium)
1 1/2 cups caramel apple dip *see note
1/2 cup chopped walnuts (optional)
Instructions
In a mixing bowl, combine 2 1/2 cups gluten-free flour blend, oats, sugar, baking powder and cinnamon. Mix in melted butter just until moistened. Set aside 2 cups of the flour mixture for topping. Pat remaining flour mixture into a greased 13“x9” baking pan. Bake at 375 degrees for 15 minutes.
Meanwhile, stir caramel and apples together. Spread this mixture over the hot crust. Combine nuts and reserved flour mixture; sprinkle over the caramel and apple mixture. Bake 30 to 35 minutes longer or until lightly browned. Cool completely before cutting.
NOTE I used a bag of Kraft Caramels. There is a recipe on the back of the bag. Unwrap caramels (14 ounce bag), add 2/3 cup half and half and melt in a pan on the stove, stirring frequently. This will give you enough caramel for this recipe plus a little to drizzle over the bars after they come out of the oven. I forgot that step before I took the picture for this recipe.
