Cheesy Baked Spanish Rice
Amazing comfort food with a bit of a spicy kick.

A tasty family favorite, but it's baked and is loaded with cheese. So tasty!

Ingredients
1 1/2 pounds ground beef
1 sweet onion, diced
7 ounce can diced chilies
1 sweet bell pepper, seeded and diced
4 Roma tomatoes, diced
2 cups frozen corn
1 tsp garlic, minced
2 tsp cumin
2 tsp chili powder
1 tsp granulated onion
1 tsp granulated garlic
salt and pepper to taste
4 6 cups cooked long grain white or brown rice (depending on preference)
3 cups shredded cheddar cheese, divided
Instructions
In a large skillet, cook the ground beef and onion until the beef is cooked and the onion is soft. Add the chilies, bell pepper, garlic and spices. Stir to combine well. Add the cooked rice, depending on how much rice you want in this dish. My family likes it to be a bit heavy on the rice, put in as much as your family prefers. Once it’s thoroughly combined, mix in half of the shredded cheddar cheese. Place into a large baking dish that has been sprayed with non stick cooking spray. Top with remaining cheddar and bake in a 350 degree oven until the cheese is bubbly and it’s heated through.
For added spice, add some crushed red pepper flakes with the spices.
