Cheesy Green Chili Rice Casserole

Not spicy, just loaded with flavor and cheesy goodness!

Ingredients
1 pound ground beef
1 large onion, chopped
1 teaspoon minced garlic
2 Tablespoons olive oil
4 cups cooked long grain brown rice
2 cups sour cream
1 cup cottage cheese (optional)
1 Tablespoon chili powder
1/2 teaspoon sea salt
1/8 teaspoon pepper
1 cup Anaheim Pepper, chopped
2 cups cheddar cheese, shredded, divided
Instructions
In a large skillet, brown ground beef, onion and garlic in olive oil until beef is cooked and onions are tender. Remove from heat. Stir in the rice, sour cream, cottage cheese, 1/2 cup cheddar cheese, seasonings and peppers. Spoon into a 13×9-inch greased baking dish. Bake at 375 degrees for 25-30 minutes or until heated through and bubbly.
