Chicken Tenders
Easy and your kids will love these.

I have been trying to think of a good substitute for bread crumbs for really good chicken tenders. I found that this recipe was a hit. I saw this package in a store that read TVP (textured vegetable protein). I came home and created this recipe. I love this product. The maker of this product is Bob's Red Mill. I really like that it is high in protein.

Ingredients
4 eggs
1 cup TVP (textured vegetable protein)
1 teaspoon dried Thyme
1 pound of chicken tenders
salt and pepper
Instructions
Heat up a nonstick skillet with the olive oil. In a bowl beat eggs with a fork. Then in another bowl put in the TVP with the Thyme. Stir until well blended. Sprinkle some salt and pepper on the chicken tenders. Dip each tender in the egg mixture, then into the TVP. Make sure that the chicken is coated well with the TVP mixture. Then cook them on medium high in your skillet. They are done when they get this dark golden brown color. Set them on paper towels to cool.
