Chocolate Cherry Cheesecake

A rich and tasty dessert. A beautiful cheesecake for your Valentine's Day dessert or anytime you are craving chocolate covered cherries.

Ingredients
Crust:
2 cups gluten free graham cracker crumbs
½ cup sugar
¼ cup cocoa powder
6 Tablespoons butter
Filling:
4 8 ounce packages cream cheese
1 ½ cup sugar
4 eggs
2 teaspoons vanilla
1 10 ounce jar Marachino cherries, drained, reserve half of the liquid and coarsely chopped
1 11 ounce package dark chocolate chips, melted and cooled
Instructions
Combine crust ingredients. Press into a springform pan. Bake at 350 degrees for 10 minutes. Cool completely. Once cooled, wrap bottom of cheesecake pan in aluminum foil.
Cream the cream cheese and sugar together until smooth and creamy. Add eggs one at a time, beat well after each addition. Add vanilla and mix well. Divide the cream cheese mixture in half. Mix the cherries into half of the cream cheese mixture. Mix the melted chocolate into the second half of the cream cheese. Pour chocolate cheesecake filling into crust. Top with cherry mixture, smooth top. Place pan in a large roasting pan. Fill with hot water, so that the water line is halfway up the outside of the springform pan. Bake at 325 for 1 hour, or until set. Remove from oven and place on cooling rack to cool for 1 hour. Run a knife around the edge of the cheesecake to loosen. Refrigerate for 4 hours, or overnight.
