Chocolate Peanut Butter Brownies

These have got to be the BEST gluten-free brownies I have made yet. Very moist and chocolaty. In place of the unsweetened chocolate, try using bittersweet chocolate for an ever better flavor. So rich, you will want a glass of milk or a cup of coffee to go along with them. So good!

Ingredients
1/4 cup sorghum flour
1/4 cup tapioca flour
1/2 cup rice flour, plus 1 tbsp reserved
1/4 tsp baking powder
1/4 tsp xanthan gum
1/2 tsp salt
3/4 cup butter
3 oz unsweetened chocolate, finely chopped
3 eggs
1 1/3 cups brown sugar, firmly packed
1 1/2 tsp vanilla
3/4 creamy peanut butter
1/4 cup granulated sugar
1/4 tsp cinnamon
6 tbsp whipping cream (or half-and-half)
Instructions
1 – Preheat the oven to 350 degrees.
2 – Butter a 9×13×2 baking dish.
3 – In a small bowl, sift the flours together well.
4 – Add the xanthan gum, baking powder, and salt and whisk well.
5 – In a medium saucepan, melt butter and chopped unsweetened chocolate over low heat, stirring until smooth. Remove from heat.
6 – In a large bowl, whisk together the eggs, brown sugar, and vanilla. Stir in the melted chocolate.
7 – Gradually add the flour mixture until combined. Pour into a greased 9×13×2 pan.
8 – In your stand mixer (or with an electric mixer), combine the peanut butter, sugar, cinnamon, whipping cream, and remaining tablespoon of rice flour. Drop the mixture by spoonfuls on top of the brownies mixture.
9 – Using a knife, drag the peanut butter mixture over the surface to marbleize brownies. Bake for 25 minutes. Cool before cutting!
