Coconut Coffee Bread
This is a Very Moist and Flavorful Bread

I was playing around with some flours and this is what I came up with. This is a sweet bread, but not to sweet. It would be great with a cup of coffee in the morning.

Ingredients
1/3 cup sorghum flour
1/3 cup sweet rice flour
1/3 cup coconut flour
1/2 cup white rice flour
1/2 cup tapioca flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup sugar
1/4 cup sweetened coconut (pulse in a processor a few times)
3 eggs
1 teaspoon coconut extract
2/3 cup coconut milk
1/3 cup coconut oil
2 tablespoons softened butter
1/3 cup buttermilk
Instructions
Preheat oven to 350 degrees
Put all dry ingredients in a mixing bowl. Mix on low just to blend. Then add all wet ingredients and mix just until blended. Then place in a bread pan sprayed with cooking spray. Bake for 30-40 minutes. Or until a toothpick comes out clean.
*When I make this recipe I grind the coconut in a food-processor so that I have the flavor of the coconut but not to much of the texture of the coconut.

Yeah, this bread is UNBELIEVABLE. It is the PERFECT snack with a hot cup of coffee on a cool fall morning. :)
