Coconut Cupcakes safe

Moist and Delicious cupcakes

The texture in these are amazing. I don't think you can even tell that they are gluten free at all.

Prep time 20 minutes
Cooking time 18 to 22 minutes
Servings 9 cupcakes

Ingredients

1/2 cup coconut flour
1/4 teaspoon salt
1 teaspoon baking soda
4 large eggs
1/2 cup coconut oil(melted over low heat)
1/2 cup agave nectar
1 tablespoon vanilla extract
1/2 cup unsweetened shredded coconut
1 cup coconut flakes toasted

Instructions

Preheat oven to 350

In a large bowl combine the coconut flour,salt, and baking soda.

In a medium bowl blend together the eggs,coconut oil, agave nectar, and vanilla.

Blend the wet ingredients into the coconut mixture with a handheld mixer until thoroughly combined.

Then add the shredded coconut.

Scoop 1/4 cup batter into prepared muffin cups.

Bake 18 to 20 minutes.

Let cool 1 hour. Then frost and sprinkle with toasted coconut flakes.
