Country-Style Cornbread safe

Homemade cornbread rivaling "Jiffy" brand! :-)

Easy homemade cornbread with few ingredients which will make you feel like you're indulging! Great with homemade bean soup or other hearty soup/stew! If dairy is tolerable, spread butter on top at time of serving! Yum! :-)

Prep time 5-8 Minutes
Cooking time 20-25 Minutes
Servings 6-8 Servings

Ingredients

2 cups cornmeal
3/4 t salt
2 t baking powder
2 T sugar (can reduce to 1 T if preferred)
2 beaten eggs (may leave out if allergies)
1 & 1/2 cups buttermilk (1 T GF vinegar to 1 cup milk
1/4 cup melted shortening

Instructions

Pre-heat oven to 450 degrees; also heating a greased 9 1/2 inch circle pan or cast-iron skillet (recommended!). Blend dry ingredients until well incorporated. Add eggs and milk to dry ingredients and mix thoroughly. Lastly, add heated shortening to batter and mix well. Batter will be thick, yet have a liquid feel. Take the hot baking pan out of the oven and pour batter into it (caution: batter will sizzle; don’t burn yourself). Place filled baking pan in heated oven and bake 20-25 minutes until done. When done, top will be golden brown and toothpick test will come out clean. Enjoy! :-)
