Creamy Black Bean Salsa
This dip is so good, the perfect change of pace from the regular "salsas".

My family loved this! Perfect for a change of pace, great with chips, on tacos, burritos or even with veggies. A great addition to any party buffet table or your Super Bowl party menu!

Ingredients
1 15 ounce can of black beans, rinsed and drained
1 1/2 cups frozen sweet corn, fresh or frozen and thawed
1 sweet red pepper, finely chopped
1 green pepper, finely chopped
1 medium red onion, finely chopped
1 tablespoon minced fresh parsley
1 tablespoon minced fresh cilantro
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons red wine vinegar
1/2 teaspoon cumin seed, crushed
1 teaspoon chili powder
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
fresh ground pepper, to taste
Instructions
In a large bowl, combine the beans, corn, peppers, onion, parsley, and cilantro. In a small bowl combine the sour cream, mayonnaise, vinegar and seasonings. Pour the creamy mixture over the bean mixture and toss to coat. Serve with tortilla chips, fresh veggies or serve over tacos, nachos or burritos. Refrigerate leftovers.
