Dream Peanut Butter Cookies safe

Hands down, the best peanut butter cookie ever!

Simple to make and very few ingredients make these cookies an all around winner! No flour in them at all makes these amazing cookies perfect for any peanut butter cookie lover. Nothing is missing! Even your gluten-eating friends and family will not notice that they are gluten-free, dairy-free as well! Perfect for those that can't tolerate rice flour either.

Prep time 7 minutes
Cooking time 27 minutes
Servings 36

Ingredients

2 cups peanut butter (Laura Scudders creamy seems to bring out the best peanut flavor)
2 cups sugar
2 eggs
2 tsp baking soda
1 tsp vanilla
1 pinch salt

Instructions

1 – Preheat oven to 350 degrees.

2 – Mix peanut butter and sugar until smooth.

3 – Add eggs, salt, vanilla, and baking soda – mix well.

4 – Roll dough in 1” balls and place onto cookie sheet 2” apart. (Parchment paper works great with these if you want less clean up.)

5 – Press with fork twice cross wise.

6 – Bake 8-10 minutes.

7 – Must cool on wire rack. The recipe author has tried to skip the wire rack cooling, but the cookies either do not cook all the way or they do not set right and fall apart.

    I will have to try it out! :) Sounds very yummy ... used to love peanut butter cookies but haven't had them in a very long time.

    I don't have any, but was thinking the same thing. Let me know if you get one, if you don't, then I'll try to make them this week and post one...if I can. :-)
