Super easy, super tasty and well worth the extra time to make. Adapted from my favorite dinner roll recipe, they have great texture and flavor!

Ingredients

1 1/4 cups water
3/4 cup eggs (about 5), whole
3 tbsp vegetable oil
3 tbsp honey
1 1/2 cups garfava bean flour
1/2 cup corn starch
2/3 cup tapioca flour
1/3 cup rice flour
1 tbsp xanthan gum
1 1/2 tsp salt
2 1/4 tsp active dry yeast

Instructions

1 – Heat water to 110 to 115 degrees and pour into mixing bowl. Add yeast and allow to hydrate for 5 minutes. Add eggs, oil, and honey to water and yeast.

2 – Thoroughly blend dry ingredients (except yeast). Do this either in a bowl with a wire whisk or shake together in a gallon-size, self-sealing plastic bag. With the mixer on a low speed, gradually add to liquid ingredients, until all dry ingredients are well blended. Beat on medium speed about 5 minutes.

3 – Spoon batter into greased English muffin rings or shapes made from aluminum foil. Make molds from aluminum foil in either rounds or oblong shapes for hot dog or hoagie buns. Fill with bread dough about halfway up the sides of the mold. Used a greased spatula to smooth out dough on top. Allow to rise to top of the molds and then bake in a 350 degree oven until golden brown and hollow sounding when tapped, about 20-30 minutes depending on the size of your buns. Unmold and cool on wire racks.

I made these and they turned out wonderful soft and no need to toast. I changed the bean flour to sourgum flour and used 1 Tablespoon of sugar in with the yeast.

Lar taught me her version of these (posted above), and I have to say that this stuff is AMAZING - we make it in loaf form and use it for just about everything. Seriously AWESOME, even for me, who can eat whatever gluten I want. We love it! :)
