eggplant parmesan 'pasta' safe

Not your Mama's eggplant Parmesan! I have made this for years now and saw a version of it recently featured on The View (don't mock!). I figured I should share my version! Using the eggplant as 'noodles' really makes this a filling dish!

Prep time 15 minutes
Cooking time 10 minutes
Servings 2

Ingredients

1 med Eggplant
4 tsp salt
1 tbs olive oil
1 chopped tomato
1 chopped red onion
1/2 cup cream
1 cup shredded Parmesan
1/4 cup chopped cilantro

Instructions

Peel and slice eggplant length wise and place on a flat surface. Sprinkle the salt over the slices and let sit for at least 15 minutes. This helps pull out the sourness. When done, cut the slices into 'noodles’. Stir fry eggplant noodles with the olive oil for 5 minutes alone. Add the remaining ingredients except cilantro, mix together, and let simmer for another 5 minutes. Top with cilantro and enjoy!
