Eggplant Parmesan
Such a simple, yet elegant dish!

Perfect for a family dinner or a simple dinner for two. Serve with gluten-free pasta, a salad and some gluten-free bread for a complete meal.

Ingredients
1/2 cup white rice flour
2 eggs, lightly beaten
1 1/2 2 cups gluten free cracker or bread crumbs
1 teaspoon dried basil
1/2 teaspoon oregano
1/2 teaspoon kosher salt
fresh ground pepper to taste
1 large eggplant, peeled and cut into 1/2 inch slices
olive oil for frying
marinara sauce (I used a can of crushed tomatoes with basil and olive oil)
1/2 cup grated Parmesan cheese
Instructions
Place rice flour onto a plate. Place beaten eggs into a shallow dish or bowl. In another dish, combine the cracker or bread crumbs, herbs, salt and pepper. Dip the eggplant slices into the flour, then in the egg and then coat with crumb mixture.
Heat a large skillet with enough oil to cover the bottom, not deep, just a coating. Cook eggplant in oil in batches until golden brown on both sides; drain on paper towels. Arrange in a greased baking dish (9“X13” or larger). Top each piece of eggplant with a spoon full of marinara sauce and sprinkle with Parmesan cheese.
Cover and bake for 15 minutes in a 350 degree oven. Uncover and bake 5-10 more minutes longer or until golden brown.
