Fabulous Pizza Crust
This is the best GF pizza crust you've ever tasted. So close to a gluten crust, it's very difficult for even gluten eaters to tell the difference.

This is a soft and chewy crust, or a thin and crispy crust. It all depends on how thin you smooth out your dough. Enjoy! This is from the recipe book "The Gluten Free Kitchen" by Roben Ryberg

Ingredients
1 packet yeast
3/4 cup milk, room temperature
1/2 cup potato starch
3/4 cup cornstarch
1 tablespoon xanthan gum
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup shortening
Instructions
Preheat oven to 375 degrees. In a small bowl, combine yeast and milk. Stir to dissolve yeast. Set aside.
In a medium bowl, combine all dry ingredients and shortening. Mix well.
To dry ingredients, slowly add milk/yeast mixture. Mix well. Dough will look wet, thick, and pasty but is quite workably if you spray your hnds with nonstick spray or keep your hands damps with water. This is a soft dough.
Roll or pat out dough onto a lightly greased baking tin or pizza pan. For a thin crust, pat out dough to 1/8 inch thickness. A 12-inch circle will produce a “handtossed” thickness.
Bake until the top is lightly browned.
Top as desired.
Return pizza to oven to warm the toppings and melt the cheese, if needed.

Very easy to make and turned out great! I doubled it so it would fill a cookie sheet. Made a pan type pizza with it. Worked great! Thanks for sharing this. :-)
