Flat Bread safe

Great for sandwiches, pizza crust or a bread to have with dinner.

This is the easiest bread product I've ever made. Tastes wonderful, has a great texture and stays moist for days. No need to toast like many gluten free breads, it's great as it is. Packs well for school lunches, holds together wonderfully. Also makes a great bun for burgers! The perfect gluten free bread!

Prep time 45 minutes
Cooking time 12 minutes
Servings 5 sandwiches

Ingredients

1 cup Garbanzo Fava Flour
1/2 cup corn starch
2 teaspoons xanthan gum
1 tablespoon instant yeast
1/2 teaspoon salt
1/8 cup ground flax seed
3/4 cup warm water
2 tablespoons honey
1 teaspoon cider vinegar
2 tablespoons Extra Virgin Olive Oil
2 eggs

Instructions

Mix together all of the dry ingredients in a bowl. In a heavy mixer, combine all of the wet ingredients. Slowly add dry ingredients to well blended wet ingredients. Beat on medium/medium high speed for 4 minutes. Oil the bottom of a jelly roll pan. Scrape the dough onto the oiled pan and spread as thinly as possible to fill the pan. Place the pan in a warm spot, allow to rest/rise for 35-40 minutes. Preheat oven to 425 degrees F. Bake for 11-15 minutes or until the top is allow the bread to cool before using. Cut into large pieces to fold, or sandwich size pieces to use as individual pieces of bread for sandwiches. If refrigerated, it will not be as flexible as it will be if you just leave it on the counter in a plastic bag or container. *Note – when you are mixing this bread, you will have a “bean” smell, but the bread doesn’t keep that smell after it’s baked. It actually tastes very “wheat” and also has that texture.

    Yes! I've been subbing cucumbers for pita bread with my hummus and it's just not the same...I'll try this. Is the texture similar to pita? Looks that way...

    It could be if you spread it thin enough. We served it with hummus at a party and it was wonderful! Play with it, it's easy to adapt it to suit your taste. It's great with just about anything!

    Will it work/taste good with an egg substitute? Sometimes the substitutes give recipes an odd taste..

    Honestly, I did try it one time...my first time using an egg substitute, mind you...and it didn't turn out well. I DO think that it was user error and cold work just fine after talking with a friend of mine that has to avoid eggs. If you do try it have success with it, please let me know what you did and what you used. I have not had a chance to try it again, but would love to know how to make it work! Wish I could be of more help. It is on my list of things to try again.

    They are the same thing really. If you grind your own whole flax seed, you can grind it to your taste. If you don't want to bother with that, flax seed meal works great! I generally buy the meal because it's done for me and the cost is generally close where I get mine. If you have flax seed at home, grind it in a coffee grinder and you'll have flax seed meal. :-) I hope that helps. Let me know if you have any other questions. Enjoy!

    I am SO glad he liked it!!! It is SO easy to make and so yummy...it's a favorite at my house. Even the gluten eaters here like it. :-) Try making pizza with it..quick and easy and very yummy as well! :-)

    I love this bread. It freezes well and doesn't crumble when I'm eating at my desk! I tried it first with 1 T ground flax seed, since sometimes they bother me a bit. No problem. It's also good for pizza crust!

    So glad you like it, I know it's a favorite here! Try it with humus...such a tasty way to enjoy it too! :-) Any dip type dish that you'd normally use traditional bread works well with this bread. :-)
