French Fried Onions
A must for the traditional Thanksgiving green bean casserole.

These are very simple to make.

Ingredients
2 or 3 big sweet onions (shallots are a good variation)
enough milk for soaking onions
1 1/2 – 2 tsp salt (adjust to taste)
pepper
gluten-free flour (see notes*)
oil for frying
*Note 1 – The recipe author makes her own gluten-free flour by combining 1/2 cup rice flour, 1/2 cup soy flour.
*Note 2 – You can also make your own gluten-free flour by blending 4 cups rice flour, 4 cups bean flour, 4 cups potato starch, 2 cups tapioca flour, and 7 tsp guar gum.
Instructions
1 – Measure gluten-free flour, salt, and pepper and put into a zip lock bag.
2 – Slice the onions and separate into rings.
3 – Heat oil in a large frying pan. Oil should be about an inch deep. When the oil is hot enough, a flick of water will make the oil sizzle.
4 – Soak the onions in milk for a few minutes. (Don’t try to do all the onions at once. Just one batch at a time.)
5 – Dredge the onions in the gluten-free flour. Give them a good coating of flour.
6 – Place the onions in the frying pan with the heated oil.
7 – When the onions start to float to the top turn them over and cook until just golden brown.
8 – When the onion rings have finished cooking, lay them on a paper bag or paper towels to cool/drain some oil.
9 – Store in air-tight container, top your casserole, or eat them.

I made this tonight for green bean casserole for tomorrow, used white rice flour, corn flour and seasoned it with salt, garlic powder and a dash of chili powder. Turned out SO good! Can't wait for the casserole tomorrow now! :-)
