Frosted Banana Bars safe

A super tasty way to use up over ripe bananas.

This was inspired by a banana bar that I used to make before we started eating gluten-free. My family loved this version and the caramel frosting made them even more tasty than the original!

Prep time
Cooking time 25 minutes
Servings 3-4 dozen

Ingredients

1/2 cup butter, softened
1 1/2 cup sugar
2 eggs
1 cup buttermilk
2 medium bananas, mashed
1 tsp vanilla
1 cup brown rice flour
1/4 cup coconut flour
1/4 cup sorghum flour
1/4 cup tapioca flour
1 1/2 tsp xanthan gum
1 tsp baking soda
1/4 tsp salt

Frosting:

3/4 cup butter
1 1/2 cups brown sugar, packed
1/4 cup plus 2 tablespoons milk
1/2 tsp salt
1 1/2 tsp vanilla extract
3 4 cups powdered sugar

Instructions

In a mixing bowl, cream butter and sugar. Add the eggs, buttermilk, banana and vanilla. Combine flours, xanthan gum, baking soda and salt in a separate bowl. Gradually add this to the creamed mixture and beat to thoroughly combine all ingredients. Spread into a greased 15×10 inch baking pan. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool.

For Frosting:
In a small saucepan, melt the butter. Stir in the brown sugar and bring the mixture to a boil over high heat. Reduce the heat and simmer for 2 minutes, stirring constantly. Add the milk and bring again to the boil, stirring constantly. Remove from the heat and pour into a mixer bowl. Let cool. Add salt and vanilla and gradually beat in the powdered sugar. Beat until the frosting is creamy and the right consistency for spreading.
