German Pancake
Quick and easy breakfast treat!

This has become a fast favorite for my family, filling and easy to whip up on a busy school morning! It requires a bit more blending time than the traditional gluten recipe, but only a minute or two. Comes out of the oven looking much like the original. This recipe is adapted to gluten-free from a recipe in one of my Taste Of Home cookbooks. Simply, YUMMY! Really good topped with Buttermilk Syrup and cooked apples.

Ingredients
6 eggs
1 cup milk
1 cup gluten free flour mix (any mix will do, as long as it has guar gum or xanthan gum added)
1/2 teaspoon salt
2 tablespoons butter or margarine, melted
Instructions
Place the eggs, milk, flour mix and salt in a blender; cover and process until smooth. Pour the butter into an ungreased 13“x9“x2” baking dish; add the batter. Bake, uncovered, at 400 degrees for 20 minutes.
