Ginger-Streusel Pumpkin safe

A tasty way to enjoy pumpkin without the hassle of a crust.

Quick and easy alternative to the traditional pumpkin pie. Candied ginger adds a sweet and spicy tone to the topping. Super tasty!

Cooking time 55 minutes
Servings 8-10

Ingredients

Filling:

3 eggs, lightly beaten
15 ounces pumpkin puree
1 1/2 cups heavy whipping cream
1/2 cup sugar
1/4 cup packed brown sugar
2 teaspoons pumpkin pie spice

Streusel:

1/2 cup rice flour, (or gluten free flour blend of your choice)
1/2 cup packed brown sugar
1/2 cup cold butter, cubed
1/2 cup gluten free pumpkin granola (or gluten free rolled oats)
1/3 cup finely chopped crystallized ginger

Instructions

In a large bowl, whisk the filling ingredients together until well combined. Pour into an 8-inch square baking dish that has been sprayed with cooking spray. Bake at 350 degrees for 40 minutes.

In a small bowl, combine the flour and brown sugar. Cut in the butter until crumbly. Stir in granola and ginger. Gently sprinkle over filling. Bake 15-25 minutes longer or until a knife inserted near the center comes out clean. Cool on a wire rack. Refrigerate leftovers.
