Gingered Cranberry Pear Chutney
This is an amazing way to enjoy cranberries!

Perfect for that after Thanksgiving sandwich or salad! Amazingly good!!

Ingredients
1 cup packed brown sugar
1/3 cup red wine vinegar
1 inch ginger, peeled and sliced lengthwise
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1/2 cup apple juice concentrate
1 quart canned pears, diced to about the same size as cranberries
1 (12 ounce) package fresh cranberries
1/2 teaspoon ground cinnamon
Instructions
In a large sauce pan, combine the brown sugar, vinegar, ginger, cayenne, salt and apple juice concentrate. Bring to a boil. Add pears, reduce heat and simmer for a few minutes. Using a slotted spoon, remove pears and set aside. Remove ginger root and discard. Stir cranberries into reserved liquid. Cook over medium heat until berries pop, about 3 minutes, stirring occasionally. Remove berries with a slotted spoon, reserving liquid in the pan. Return the liquid to the stove. Bring to a boil, cook uncovered until the liquid is reduced to about 1/2 cup. Stir in reserved pears and cranberries. Stir in cinnamon. Serve warm or cold. Store in the refrigerator.
