Gluten-Free Apple Fritters
So easy...perfect for those fall apples. :-)

My family about went nuts when I produced these tasty fritters. No one would know they are gluten-free and can be dairy-free. So good!

Ingredients
1 cup gluten free flour blend
1 1/2 teaspoons baking powder
1/2 teaspoon xanthan gum
3 Tablespoons sugar
1/4 teaspoon salt
1 egg, beaten
1/2 cup milk, or dairy free substitute
1 cup peeled, cored, diced apple
cooking oil to fry in
cinnamon sugar mixture for dusting
Instructions
In a small mixing bowl, combine all of the dry ingredients.
In a medium sized mixing bowl, beat eggs and milk together; slowly add the dry ingredients. Fold in the chopped apples.
In a heavy skillet on the stove, heat about an inch of oil over medium heat. Once the oil is hot enough, gently spoon batter into the hot oil 1 tablespoon at a time. Gently take the spoon and flatten out the fritter if it doesn’t flatten on it’s own. Once the first side is browned, flip fritter over to cook the other side. They will brown quite well. The flatter you are able to press your fritter, the more evenly it will cook. Test one to see if it is done in the middle and adjust cooking for the rest of them if needed. These fritters are very forgiving. If you cut into one and it’s not completely done in the middle, you can put it back into the hot oil for a few more minutes.
Sprinkle with cinnamon and sugar mixture while still hot. Drain on paper towels. Enjoy!
