Gluten-Free Creamy Chicken Penne
Tasty lunch, side dish or light main dish!

This is adapted from a recipe I found on an ad in a magazine. It was a cream cheese ad and sounded so yummy! Cream cheese makes everything better.

Ingredients
2 cups gluten free penne pasta, uncooked (any kind will work, my favorite is a corn pasta)
3/4 cup boneless skinless chicken breasts, thinly sliced
1/2 cup chopped red onion
1 Tablespoon olive oil
6 ounces snow peas
1 small red pepper, chopped
1 clove garlic, minced
2 Tablespoons butter
1 Tablespoon rice flour
1 1/2 cup milk
4 ounces cream cheese
1/2 cup Romano or Parmesan cheese, grated
Instructions
Cook pasta according to package instructions. Meanwhile, cook chicken and onions in hot oil in large skillet for 6-8 minutes or until the chicken is done. If working with already cooked chicken, cook the onions until soft and then add the sliced chicken. Add snow peas, red pepper and garlic; cook and stir 1 minute. Remove from heat and keep warm by covering.
In a medium saucepan, melt butter. Stir in flour until well blended. Gradually stir in milk. Bring to a boil; cook on medium heat for 2 minutes or until thickened. Be sure to stir constantly. Add cream cheese, grated cheese, salt and pepper. Cook for about 2 minutes or until cream cheese is completely melted and sauce is well blended. Stir constantly.
Drain pasta and place in a large bowl. Add chicken mixture and sauce; toss to coat.
