Gluten-Free Granola
A yummy treat and wonderful on yogurt!

This is a quick and easy granola to make at a fraction of the cost of store bought gluten-free granola. You can use whatever nuts you want, or none at all. Just make sure you have 6 cups of dry ingredients to 3/4 cup of wet ingredients. I often use peanuts. The dried fruit is also fun to play with. We often use dried cherries and apples. Any combination would work fine.

Ingredients
4 cups gluten-free oatmeal
1/4 cup sesame seeds
1/4 cup shredded coconut
1/2 cup sunflower seeds
1 cup chopped nuts
1/4 cup oil
1/4 cup molasses
1/4 cup honey
2 cups dried fruit
Instructions
Preheat your oven to 325 degrees.
Mix the dry ingredients in a large bowl. Add the oil and mix well to coat. Combine the molasses and honey in the same measuring cup you used for the oil, the molasses and honey will come out very easily if you do. Mix well into dry ingredients, making sure to coat the dry ingredients well.
Spread the granola onto a lightly greased baking sheet or jelly roll pan with sides. Bake for 10 minutes and then stir. Bake another 5 minutes and stir again. Bake for another 5 minutes and stir a final time. Remove from the oven and stir several times while cooling. Add the fruit and store in an airtight container.
Doubling this recipe is easy! It makes a great gift and is a wonderful breakfast with yogurt and honey.
