Gluten Free Oatmeal Bake

For those wanting to feed relatives breakfast next week, this oatmeal bake does a good job feeding a group and will taste "normal". I would only recommend it for those celiacs who are able to tolerate gluten free oats. I realize there are some who cannot.

Ingredients
1 cup oil
2 cups milk
4 eggs
4 tsp. baking powder
2 tsp. salt
2 cups sugar
1/2 tsp. cinnamon
2 tsp. vanilla
2 small cans or 1 large can of drained peaches
6 cups Gifts of Nature certified gluten free rolled oats
Instructions
Preheat oven to 350 degrees. In the bottom of an 9×13 pan (ungreased) place 2 small cans or 1 large pan of drained peaches. (You can use the whole can of peaches without draining, but you have to bake it a lot longer.) Measure and pour 6 cups Gifts of Nature certified gluten free rolled oats over the peaches. Combine remaining ingredients in a mixing bowl and pour over the oatmeal & peaches. Bake uncovered at 350 degrees for 45 minutes (or until golden brown and center is firm).
