Gluten-free pancakes safe

These are delicious mini-souffles. My family all prefer these pancakes to the standard non-gf variety

Prep time 15 minutes
Cooking time 20 minutes for whole batch
Servings 4-6

Ingredients

1 3/4 c. gf flour (I use Mochiko, sweet rice flour)
1 3/4 t. gf baking powder
1/4 1/2 t. salt
1 1/2 c. milk
6 egg whites
3 T. sugar
3 T. melted butter

Instructions

Sift together flour, baking powder, salt
Add milk to make stiff, not runny, consistency
Melt butter on stove and set aside for a few minutes to cool
Beat egg whites, adding sugar gradually after you can see lines formed in the whites by the beater. If you add the sugar too soon, the whites won’t beat to their full volume.
Fold the whites into the batter
Fold butter into batter
Cook in butter on medium-hot griddle
I keep them warm in the oven until they’re all prepared, and serve with maple syrup and jam
