Grandma's Sugar Cookies safe

Simple and delicious!

This is a recipe that my grandmother used to make all the time when I was little. I converted it to gluten-free and my kids can't get enough of them. So yummy!

Cooking time 10-12 minutes
Servings

Ingredients

1/2 cup butter or margarine, softened
1/2 cup oil
1/2 cup powdered sugar
1/2 cup granulated sugar
1/2 teaspoon vanilla
1 egg
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1 teaspoon xanthan gum
2 cups gluten free flour blend
additional sugar

Instructions

Cream together first 6 ingredients. Mix in dry ingredients. Scoop out with a small cookie scoop onto a baking sheet, press down to about 1/4 inch with the bottom of a glass dipped in sugar (dip the glass first in the cookie dough to help the sugar stick to the glass). Bake in a 350 degree oven for 10-12 minutes or until lightly browned.

    We use the Pamela's All-Purpose Baking and Bread Mix for this recipe and they turn out AMAZING. We even made them pretty thin and they hold a nice, chewy yet delicate texture. Mucho nummy!!!
