Great Bread from a Machine!

This is a great bread. It holds together great for sandwiches as well as is a great size. It toasts up well. It has a nice light taste and texture. This is a must try! We searched for 2 years for a bread we liked. We have stopped looking now. This bread is pretty perfect.

Ingredients
3 large eggs
1 2/3 cup water
3 tablespoons corn oil
1 teaspoon vinegar
¼ cup brown rice flour
1 1/4 cup tapioca flour
1 ½ cup corn starch
½ cup skim milk powder
3 tablespoons sugar
1 ½ teaspoons salt
2 ½ teaspoons xanthan gum
1/4 cup Montina flour or ground flaxseed
2 1/4 teaspoons active dry yeast
Instructions
Combine the first 4 ingredients in a medium bowl and put them in your breadmachine’s container.
Combine the remaining ingredients, except the yeast, in a seperate bowl. Then add this to the mixture in the bread machine. Add the yeast, without mixing. Set your machine to the whole wheat light crust setting. Press start.

Interesting recipe, Jackie! How does this compare with some of the others? I've bumped into some great recipes lately ... wondering what you would change if anything. Maybe we could tweak it???
