Herbed Focaccia

This is a great recipe. When I bakes it in the oven it fluffed up and looked amazing. The taste it so good. Your friends who are not gluten free will never know it is a gluten free bread.

Ingredients
1 1/2 teaspoons active dry yeast
2 teaspoons sugar
1/2 cup warm water
White rice flour for dusting
1 1/2 cups of Carols Sorghum Blend*
1 1/2 teaspoon xanthan gum
2 teaspoons chopped fresh rosemary, or 1 teaspoon dried
1/2 teaspoon onion powder
1/2 teaspoon salt
2 large eggs at room temp
2 Tablespoon extra virgin olive oil
1 teaspoon vinegar
TOPPING
Olive oil cooking spray
2 teaspoons chopped fresh rosemary or 1 teaspoon dried
1/2 teaspoon Italian seasoning
1 teaspoon Kosher salt
CAROLS BLEND:
1 1/2 cups sorghum flour
1 1/2 potato starch/cornstarch
1 cup tapioca flour
Instructions
In a small bowl dissolve yeast and sugar in warm water. Set aside to foam 5 minutes.
Grease a 11 × 7 inch nonstick pan. Dust the bottom and sides of the pan lightly with white rice flour.
In a mixing bowl combine the flour sorghum blend,xanthan gum,onion powder,salt,eggs,vinegar,rosemary with yeast mixture.
Beat on low until blended. Then turn to medium and beat for 30 seconds. Dough will be somewhat soft.
Transfer dough to pan. Spread dough to edges of pan with a wet spatula. Making sure dough is uniformly thick.
Let the dough rise until dough is level with top of pan. Spray dough with cooking spray and sprinkle with rosemary,salt and Italian seasoning.
Bake in a 400 degrees oven
