Holiday Pumpkin Bread
Adaptation of a recipe from Betty Crocker.

Warm and moist and tasting of Pumpkin Pie this holiday treat will simply melt in your mouth leaving you begging for more.

| Servings | 8 - 10 holiday sized slices. |
Ingredients
3 C Flour (See my blog post “A Versatile Flour Blend for…”)
1 tsp Salt
2 tsp Baking Soda
1/2 tsp Baking Powder
1 Can Pumpkin (15 oz)
1 2/3 C Sugar
2/3 C Vegetable Oil
3 Jumbo Eggs
2 Dashes Vanilla
1 tsp Cinnamon
1/2 tsp Cloves
1/2 tsp Ginger
Instructions
1. Preheat oven to 350 degrees Fahrenheit.
2. Mix Flour, Salt, Spices and Baking Soda together.
Also add 1 1/2 tsp Xanthan Gun. (if using – see flour blend instructions) Do not forget the Starch trick in the flour blend instructions!
3. Mix Pumpkin, Egg, Sugar, Vanilla and Vegetable Oil together.
4. Stir in dry ingredients to Pumpkin mixture until batter is formed – it should be more thick than cake batter.
5. Grease a standard loaf pan and place batter mixture inside.
6. Bake for 1 hour placing oven wrap over the top in the last 15 or 20 minutes of baking to prevent over browning.
7. When taken out of the oven brew coffee. When coffee is finished brewing slice bread and enjoy with copious amounts of butter. :)
