Irish Stew safe

The perfect comfort food for your St. Patrick's Day dinner.

A traditional Irish dish, comfort food at it's best!

Cooking time 2 1/2 hours
Servings

Ingredients

4 cups water
1 pound of diced/chopped mutton, beef or lamb
4 medium size carrots
2 medium size onions
1 tablespoon parsley
5 medium size potatoes
1 pint stock (whatever variety you wish)
black pepper, to taste

Instructions

boil the meat alone in the water for about an hour. After an hour, strain off the fat. Chop all of the vegetables to bite size pieces. Put all ingredients in a big pot, including the stock and bring it all to a boil. Simmer for 1 1/2 hours.
