Italian Seasoned Potatoes
Zesty and perfect for summer!

A new twist on the same old roasted potato side dish. Quickly thrown together and have it cooking while you heat up your grill and cook the rest of the meal on the grill.

Ingredients
8 to 10 medium sized red potatoes (or potato of your choice)
Bottled or homemade Italian salad dressing*
Parmesan cheese, enough to sprinkle on the top if desired
Instructions
Scrub potatoes and slice them into bite sized pieces about 1/4 inch thick. The smaller the pieces, the faster they will cook. Place chopped potatoes in a glass 9“X13” pan Pour desired amount of salad dressing over potatoes, enough to coat them, but not have them swimming in oil. Cover and bake in a 400 degree oven until done.
Sprinkle with Parmesan cheese if desired.
To cook them on the grill, simply put in foil packet and place on grill. Watch them to make sure the potatoes on the bottom of the packet don’t burn. Having the foil packet away from the direct heat will help. If you want them to cook faster, par bake them in the oven first, then finish on the grill.
*If you make your own salad dressing, using soy- or corn-free oils will make this a safe dish for those that cannot have soy or corn.
**For dairy-free, omit Parmesan cheese on top.
