Leek and Potato Soup safe

This is a tasty soup that you can either eat cold or hot.

This soup is a very flavorful soup. The Leek flavor is very light. But the soup is very filling.

Prep time 20 minutes
Cooking time 30 minutes
Servings 7 to 8 cups

Ingredients

16 18 ounces leeks
6 cups water
2 pounds red or white potatoes
2 chicken bouillon cubes
1 teaspoon salt
1/2 teaspoon black pepper, or to taste
1/2 cup sour cream

Instructions

1. Remove and discard the heavy green leaves and roots from the leeks. Slice the leeks lengthwise and cut into small slices. Wash very well to remove all dirt. Place the leeks in a large pot. Cover with 6 cups of water. Set aside.

2. Peel the potatoes and cut into small dice. Add to the pot. Cover with a lid. Over medium-high heat, cook until both the potatoes and leeks are tender, approximately 15 minutes after the liquid begins to boil add the bouillon cubes and salt. Puree in a blender until smooth. Add the black pepper and sour cream just before serving.

3. Serve hot or cold.
