This is a new favorite for summer time. I've had this recipe in my recipe box for years, I don't even remember where I found it. So glad I tried it, everyone loved it. Fresh clean flavors of both dill and lemon add a delicious flavor to a baked potato. Very tasty!

Ingredients
4 large baking potatoes
1/4 cup butter, melted
1/3 cup sour cream
2 Tbsp finely snipped fresh dill or 1 1/2 tsp dried dill
4 tsp lemon juice
1/2 tsp garlic powder
freshly ground pepper, to taste
pinch of salt
1/3 cup parmesan cheese
Instructions
Scrub potatoes, prick with a fork and bake in a 425 degree oven for 40-60 minutes, or until tender. Let stand 5 minutes. Cut potatoes in half lengthwise. Gently scoop out each potato half leaving a thin shell. Place the scooped out potato flesh into a medium sized bowl. Add remaining ingredients, except for the cheese and beat to combine. Pile the mixture into the potato shells. Top with cheese and bake in a 425 degree oven for 20 minutes or until lightly browned.
**If a dairy free version is desired, use your favorite dairy free margarine, sour cream and omit the cheese.
