Lemon Scones safe

Scrumptious lemon scones!

This recipe was adapted from the lemon scones recipe used by Amherst Shore County Inn located in Amherst Nova Scotia. The scones are very lightly flavored with lemon, just enough. Would be amazingly good with Lemon Curd, even adding a bit in a indention in the scones before baking would be wonderful!

Cooking time 30 minutes
Servings 8

Ingredients

1 cup white bean flour
1 1/2 cups white rice flour
5 tsp baking powder
2 tsp xanthan gum
1/4 cup honey
1/2 cup butter, cold
2 eggs
1 tbsp grated lemon peel
1/3 cup fresh lemon juice
1/2 cup water

Instructions

1 – Preheat oven to 400 degrees, set aside an ungreased baking sheet.

2 – In a large mixing bowl combine flours, bakind powder, and xanthan gum; cut in butter with pastry blender.

3 – In another bowl mix together the honey, eggs, grated lemon peel, lemon juice, and water. Add liquid mixture to the dry ingredients and stir with fork.

4 – Turn dough out onto a lightly floured surface and knead 10 times. Pat dough into round shap 1” thick and brush with lemon juice; sprinkle with 1 tbsp of granulated sugar. Cut into wedges and place wedges onto baking sheet and bake for 30 minutes.
