Maple Brine for Turkey safe

A tasty brine for turkey or even chicken.

An easy way to add flavor and moisture to your turkey this season! This recipe makes enough for a small turkey (less than 12 pounds) or turkey breast. Easily doubled for a larger turkey, you just need enough liquid to cover the bird. You will be amazed at how moist this will make your turkey.

Prep time 30 minutes
Cooking time 55 minutes
Servings 1/2 gallon

Ingredients

1 cup brown sugar
1/2 cup maple syrup
1/3 cup kosher salt
1 head garlic, cloves separated, not peeled
3 bay leaves
1 tsp ground ginger
1 teaspoons dried chili pepper flakes
3/4 gluten free soy sauce
1 teaspoon dried thyme
1 1/2 quarts water

Instructions

Combine all ingredients in large stainless steel pot. Bring to a simmer, remove from heat and cool completely. Remove turkey neck and giblets. Rinse turkey well. Put turkey in cold brine. Use a stainless, plastic or other non-reactive container. Add water if brine doesn’t cover bird (or use zip top bag, or two, filled with ice to displace some of the brine to cover). Refrigerate 2-4 days (just 2 for just a turkey breast), turning bird twice a day.

To cook, remove turkey from brine, pat dry and brush with olive oil. Roast in a 325 degree oven until internal temperature reaches 185 degrees.
