Mike's Amazing Macaroni and Cheese
Modified from a longtime family recipe that used to use Saltines. It's now Gluten-Free!

If your family likes macaroni and cheese, this is a super-simple recipe that makes great leftover Macaroni and Cheese, too.

Ingredients
1 3.5 ounce package of Crunchmaster Rice Crackers (Sesame or 4 Cheese Artisan), smashed
1 24 ounce black of Sharp or Extra Sharp Cheddar Cheese, shredded
2 cups of Milk
1/2 cup FINELY diced white onion, sauteed or 1/4 tsp Onion Powder.
1 16 ounce bag of Tinkyada brand brown rice Fusilli pasta (or equivalent pasta)
Instructions
Preheat oven to 350-degrees
1 – Boil noodles until soft, set aside
2 – FINELY dice onion and sautee until very, very soft. This is for flavoring, not texture. Alternatively, you can use onion powder.
3 – Smash and crumble crackers until pieces are 1/8-inch or smaller in size, basically crumbs, but not powder
4 – Add cracker crumble to noodles
5 – Stir in sauteed onion
6 – Stir in shredded cheese until evenly distributed
7 – Pour into lightly greased 9×13 baking dish
8 – Bake in 350-degree over for 30 minutes or until top is golden brown.

Yes, it really is! Long-time family favorite that lay unused for years after we found out about the GF intolerance thing.
Not the healthiest, but the kids love it.

You have 2 c milk in the ingrediants but don't address it in the instructions. Can you clarify please?

Ah, yes, and I'll edit the recipe, too. I put the milk in last otherwise the cheese doesn't distribute well.
