Mimi's Shortcake
A wonderful biscuit/scone recipe for strawberry shortcake!

I love to use this when making strawberry shortcake. I think the gluten-free version tastes even better than the gluten-full original! You can substitute your favorite GF flour or flour mix - What's stated here is an attempt at reproducing a small-scale version of my mix that I use for baking. You can also adjust the sugar to accommodate your taste. Some people prefer a sweeter shortcake, while some prefer the more traditional biscuit.

Ingredients
SHORTCAKE:
1/2 cup white rice flour
1/2 cup brown rice flour
1/3 cup tapioca flour
1/3 cup potato starch
1/3 cup almond meal
(or just use 2 cups of your favorite flour mix)
2 tsp xanthan gum
1/4 to 1/2 cup sugar (your preference)
2 tsp baking powder
1/8 tsp salt
1/3 cup very cold unsalted butter
1 large egg, slightly beaten
1 tsp vanilla
1/2 cup heavy whipping cream
EGG WASH:
1 large egg, slightly beaten
1 T heavy whipping cream
Instructions
1. Sift together dry ingredients in a large bowl.
2. Cube the cold butter into the dry ingredients.
3. With a pastry blender (or in a large food processor), cut the butter into the dry ingredients. The mixture should look like coarse crumbs.
4. Whisk together the egg, vanilla, and cream in a small bowl.
5. Add wet ingredients to flour mixture, mixing just until the dough comes together – don’t overmix.
6. Turn out onto a lightly floured surface and pat into a 1-inch thick circle. NOTE: The GF version seems to be a bit harder to work with, and does better if refrigerated before rolling out.
7. Cut out with a biscuit cutter, and place shortcakes on an ungreased baking sheet. (I prefer to use stoneware).
8. In a small bowl, mix the ingredients for the egg wash and brush onto the tops of the shortcakes.
9. Bake at 400 degrees for 15-18 minutes, or until a toothpick inserted into the center of a shortcake comes out clean.
10. Cool on wire rack.
