Mini Pies
Almost like a cookie with all the goodness of a slice of pie!

Such an easy treat to make and they look fancy enough to serve at any party, shower or tea. Fill with any jam or fruit filling, much like a pie and enjoy!

Ingredients
Standard gluten free pie crust (I used “The Best EVER Pie Crust” here on Gling
Your favorite jam or prepared pie filling
1 egg, beaten
2 Tablespoons water
sugar for sprinking
Instructions
Prepare pie crust as directed in recipe. Once crust is ready to work, roll out to 1/8 inch thickness and cut with desired round cutter (I used a pint jar). You will need two rounds per finished pastry. Place onto a cookie sheet.
Beat egg with water to make an egg wash and brush the outer edge of each round with egg wash. Place about 1/2 teaspoon of desired filling into the center of each round. Then top each round with another round of pastry dough. Crimp around the edges with a fork to seal in the filling, being careful not to pierce into the filling. Brush entire pastry with egg wash and sprinkle with sugar.
Bake in a 350 degree oven for 20-25 minutes, or until golden brown.
