Onion and Fennel Bisque safe

This is a great first corse dish. The texture is smooth and light. This would also be great with a piece of gluten free bread.

Prep time 20 minutes
Cooking time 20 to 30 minutes
Servings 4 servings

Ingredients

2 cups chopped onion

2 garlic cloves minced

2 cups diced potatoes

1 chopped carrot (about 1/2 cup)

1/4 cup butter

3 1/2 cups chicken broth (or vegetable broth)

1/2 cup half and half

1 tsp fennel

1 tsp salt

pinch pepper

Instructions

In a saucepan melt the butter

add the onion,carrot,garlic. Saute until tender.

When the vegetables are soft add the potatoes, broth and the fennel.

heat on low until the potatoes are tender.

Then blend in a blender until smooth.

Run through a sieve

Place back in the skillet and add the half and half to saute.

Add more salt and pepper if needed.
