Peanut Brittle safe

Old family favorite during the holidays.

This was my grandmother's recipe. She made it every year for Christmas. One of many of her wonderful recipes that I remember from my childhood. This was a favorite of mine and one of the first candies I ever tried to make. Any nuts can be used, but raw peanuts are my favorite. I don't have the temperature on my recipe for using a candy thermometer, but you want to reach the hard crack stage when cooking.

Ingredients

1 1/2 cup sugar
1 cup corn syrup
2 cups raw peanuts
1/4 teaspoon salt
3 tablespoons butter
1 teaspoon baking soda

Instructions

Spray a cookie sheet with cooking spray. Measure out your butter and baking powder and set aside.

Put sugar, corn syrup, peanuts and salt into a large pan. Cook over medium high heat stirring constantly for 5 to 8 minutes, or until it reaches a rich amber color. This is important for a crunchy brittle. Remove from heat.

This next step goes fast, so make sure you have your ingredients together and ready. Add butter and baking soda and mix together quickly. Your candy will start to set up quickly, so you have to move fast. Once you have the butter and baking soda mixed in, pour your candy onto your greased baking sheet and let sit. Once it’s cooled completely, break into bite sized pieces.
