Potato Slices
A quick side dish for any meal

I made up this recipe one night when I didn't have enough potatoes if I were to chop and bake in small pieces. I thought that if I sliced them the long way that it would go further. Well they were a hit. They are pretty too.

Ingredients
3 medium potatoes sliced length wise
1/4 tsp salt
1/4 tsp pepper
1/4 cup parmesan cheese or whatever you have on hand.
2 Tbls Olive Oil
1/2 teas dried thyme
Instructions
Preheat oven to 375
After you slice the potatoes very thin put then in a bowl. Poor the olive oil and the salt and pepper,dried thyme into the bowl then mix with your hands. Then place them on a cooking sheet separating them. Top with your cheese of choice. Bake until they are either soft about 20 minutes. Longer if you want them to be crunchy.
